Buon appetito!

QUINOA WITH AUBERGINE AND MUSHROOMS
Quinoa has excellent nutritional properties. Although it is used like a grain thanks to its good starch content, it contains no gluten and is therefore suitable for people with coeliac disease. Its properties make it a very useful food for those on weight-loss diets who need energy and minerals. Its abundant magnesium helps prevent cardiovascular disease, arrhythmias and high blood pressure, while vitamin E, an excellent antioxidant, protects against free radicals and supports the cells of the cardiovascular system. The lysine and vitamin C in quinoa help keep body tissues healthy. Quinoa with aubergine and mushrooms can be served warm or at room temperature.
INGREDIENTS FOR 3 PEOPLE
250 g quinoa
500 ml lightly salted vegetable broth with gomasio
1 Tunisian aubergine
2 local aubergines
300 g button mushrooms
1 spring onion
Extra virgin olive oil to taste
Soy sauce to taste
Gomasio to taste
Ginger to taste
1 tablespoon organic nutritional yeast flakes
1 tablespoon almond flour
METHOD
Wash and clean the mushrooms. Cut the local aubergine into chunks and slice the Tunisian one, then soak them in salted water for 10 minutes, rinse and dry.
In a pan, heat a little water with 2–3 tablespoons of extra virgin olive oil, then add the grated spring onion and a pinch of gomasio. Sauté briefly, add the aubergine chunks and, after 10 minutes, the sliced mushrooms. Cook for about 10 minutes over high heat, adding the ginger, almond flour, yeast flakes and a little water.
Grill the Tunisian aubergine slices, seasoning them with soy sauce, olive oil and gomasio. Bake 1 whole local aubergine for about 30–40 minutes.
In a pot, heat a drizzle of olive oil, add the quinoa and toast it briefly. Pour in the vegetable broth and cook, covered, over low heat for about 15 minutes, until the liquid is fully absorbed.
Cut the baked aubergine in half lengthwise and scoop out the flesh with a spoon.
Let the quinoa rest for a few minutes, then arrange it on a plate with the grilled aubergine slices around it and the mushrooms and aubergine in the centre. Top the quinoa with the baked aubergine flesh, seasoned with soy sauce and lemon.
Enjoy your meal!
